Science Question?

I was taking a science exam, and one of the questions struck me, it went like this...

"What is the process called when water particles build up enough kinetic energy to break the surface, this happens well below it's boiling point."

Anybody know the answer?

The questions isn't word-for-word, it's what I could remember. Also, the next question was "What happens to the temperature of the water remaining?"

Evaporation.

When you sweat and a breeze crosses your skin it feels cooler. That's 'cause your sweat evaporates more quickly and carries away that heat.

I presume your sweat isn't boiling at that point...ar ar ar.
