Santoku or Chef Knife? I need opinion!?

I bought an 6 1/2" santoku hollow ground knife from Bed, Bath & Beyond years ago and it still work great. This hollow ground knife has a great feature for slicing or dicing and the food does not stick to the blade. It has a perfect balanced and comfortable in the hand too

I have a Shun 7" Santoku Damascus blade Cobalt. DM-0517. It is great for slicing and anything without a bone. It is sharp beyond belief and keeps a fantastic edge. Damascus steel is layered and therefore provides a really, really thin edge. The downside is that it is easily nicked where a gap appears where a piece of the edge has broken off. But for slicing soft foods nothing beats it in my opinion.

I have both and I love the Santoku. I like the wider blade and the hollows help things not stick to the sides.
