Which State or county in America would suit me in terms of climate, vegan/veggie cuisine, lakes, woods & countryside with access to coast?

Me and my partner want to move to the U.S. I have hyperhydrosis so need to be somewhere in a cool to warm climate with no extremes. I'm thinking 15-28 degrees Celsius average. So maybe not far North or South and away from cities & pollution etc so New York is a no no. Not interested in Malibu, Miami, LA etc no dense populations or fake assholes. Please suggest some nice places to live ideally by coast although don't mind not but would like lakes and rivers instead. I am from Wales and like my green scenery, mountains & countryside. However I live in Cardiff and am fed up of city life. Thanks! PS - me and my partner have been looking and like the look of Sacramento, Monterey and San Francisco. Also, I dont mind travelling a few miles to the coast or to lakes or nature parks.

Some other places that might suit your taste, other than the ones you have mentioned (Monterrey is a particularly good choice, but San Francisco is one of the biggest cities in the states with all the normal city things) are these:
Portland Oregon: Green, good neighborhoods outside of the city center.
Eugene, Oregon
Olympia, Washington
I think the Pacific Northwest will have the best qualities that suit your desires.

you cannot just move here on a whim. you must ALREADY have an employer willing to sponsor work visa which dictates where you will be living.
