Most Americans do say "Happy New Year." The 's' is only present when it is used in a possessive sense like in "New Year's Eve"

Probably from New Year's Day. In other words, Happy New Year's Day.

I suppose it's genitive ("possesive") as in New Year'S.

Why do people in the UK call Kentucky Fried Chicken "The Colonel" as in "I brought some Colonel home"? That's REALLY out there.
