How do you say it, if you only want to refer one stick of "fries" (the ones you buy from McDonald's etc.)

a bag of chips makes sense
but one stick is one fry
It's called a portion.
In practice you don't specify. You just ask for fries, if you want 1 portion. 2 fries if you want 2 portions and so on.
a handful of fries,
or if you want to say just one, then its a fry.
