I go the grill! Grill some Salmon and microwave a steamer bag with broccoli or make veggie of choice and a boil in bag rice.
Grill a steak or chicken and make faitas.
Buy some refrigerated pasta and Margaritaville Shrimp, it's delicious and quick!
A creative grilled cheese & ham, tomato sandwich with soup.
You can also get soups like lobster bisque that just need to be warmed up. For an appetizer just add toasted french bread with olive oil and pepper, a dash of salt.
Another easy appetizer is toasted french bread, brush with olive olive oil and add some basil, top with Mozarella and bake until golden.
Lots of easy things to do depending on your taste....

I say a roast chicken. The only difficult thing about it is that it has a lengthy bake time- other than that, all you have to do is season it and throw it in the oven ( which only takes five minutes).
It looks like it took a lot of work, but they're so easy. :)

Fajitas, just slices some onions peppers and meat, season and stir fry til it sizzles and the meat is cooked through.

Chinna, I make an easy pasta sauce with de-cased pork sausage. that goes over meat or the cheese ravioli, I prefer the meat. Good sprinkle of parmesan on top.

If I am really lazy, I break out the BBQ and do a rib eye, and frill some veggies with it.

I have serveral easy, fast go-to recipes that are quite delicious though I would not call them my most delicious recipes. Most of my most delicious recipes call for a lot of fresh ingredients and many are cooked for a long time. I call these quick recipes my Pantry Recipes because I generally have most of the ingredients in the fridge or pantry and/or I am incorporating leftovers.


Tortellini, Chicken & Spinach Soup
Yield: 4 Servings

1 Pkg. Barilla Three Cheese Tortellini (Dinner for 2 size) (This is dry pasta)
6 Cups Low Salt Chicken Broth
1- 1 1/2 cups cooked chicken from leftover chicken or poached chicken breast, or deli ham slivered
2 Cups Fresh Baby spinach, washed and roughly chopped or frozen defrosted baby peas
Salt & Pepper to Taste
4 tablespoons Grated Parmigiano or Asiago cheese or to taste

Prepare Tortellini according to package directions, set aside or refrigerate.
Shred or cut cooked chicken into strips, set aside or refrigerate

Heat Chicken broth to a boil, immediately reduce to a simmer.
Place ½ cup raw spinach in each of 4 bowls, i
Add tortellini, heat until broth returns to a simmer
Add cooked chicken; continue to simmer until hot, probably about 2 minutes
Add salt and pepper to taste
Ladle hot soup, tortellini and chicken into the bowls containing the spinach
Garnish each bowl of soup with grated cheese
Serve with crisp bread or garlic bread

This one I never wrote down, but we really like it for a quick meal.

PANTRY PASTA
For 4 servings
Cook 1 lb. Pasta, your choice, to the al dente stage. Just follow the directions on the pkg.

Other Ingredients:
2 tablespoons olive oil
1 sweet onion sliced thin
2-3 cloves garlic, minced
1 medium bell pepper any color though I prefer red, sliced. I freeze leftover raw bell peppers.
1 14.5 ounce chopped tomatoes
1/2 teaspoon each dried oregano, thyme and basil
1 can solid white tuna-drained, use 2 if you like tuna. Italian style tuna works the best but it is costly.
1/2 cup chopped fresh parsley, if you have it.
Salt & pepper to taste
Grated parmigiano cheese for garnish (optional)

Heat the olive oil in a large saute pan
Add onions and garlic and saute until just soft, add the sliced bell peppers and continue to saute until the vegetables until they take on a bit of color. You may have to raise the heat for a few minutes if using frozen pepper as they now contain more water and you want to cook out the water.
Add the dried herbs and continue to saute for about 30 seconds.
Mix in the canned tomatoes and simmer for about 5-10 minutes.
Add salt and pepper to taste, but go easy on the salt, The tuna is a little salty.
Add the al dente pasta to the sauce and simmer until the pasta is cooked to your liking, for me that would be about 2-3 minutes.
Add the drained tuna and gently mix into the pasta and sauce.
Garnish with the grated cheese if you want to.
Serve immediately, though leftovers are fine the next day for lunch

GARLIC & OIL PASTA SAUCE (AGLIO E OLIO)

Enough for pasta for 2

INGREDIENTS

2 cloves of garlic
2 tablespoons of olive oil

METHOD

Peel the garlic and chop it into tiny pieces.

Put the oil into a frying pan on a moderate heat. Add the garlic. Fry the garlic for about 5 minutes until it is golden brown. Stir frequently to stop it sticking.

ADDITIONS & ALTERNATIVES

For Aglio e Olio Peperoncino, add ½ a teaspoon of chilli flakes.
