Electrically, it's a "Single Pole, Double Throw" switch, abbreviated SPDT.You might also see it called a "Double Throw, Single Pole" switch, abbreviated DTSP.

double throw switch. A double pole will switch 2 current carrying conductors. There are many other configurations.
