What foods should I eat to gain weight?

I'm trying to gain FAT (muscle too, but mainly fat) because I am 5'8" and only 104 lbs. I am a size 0 and I am bony! It even hurts to sit or lay down in certain positions because of my bones poking out.
Even though I am underweight, my doctor says i'm healthy. My lab results always come back great...I have no nutrient deficiencies or health problems. But even though I am healthy, my doctor said that i AM underweight and that I should try gaining some weight to prevent myself from developing health problems in the future. He suggested that I eat some meat, eggs, or dairy. He said that animal fat would help me gain weight. But I am vegan and NOT willing to eat meat or eggs or dairy. Is there any VEGAN food that will make me gain weight? I already eat A LOT and nothing I do works!! I snack on fruits all day long, I eat HUGE portions of food for my meals, and I eat a lot of CARBS. For lunch today I had a huge bowl of steamed white rice (i had so much in my bowl, it was a mountain of rice overflowing the bowl), a separate huge bowl of black beans, and a separate huge bowl of steamed brocolli. I eat this much for EVERY meal. I literally eat til I am stuffed and can barely breathe. What vegan healthy food can I eat that will make me gain weight? What I mean by healthy is that its not heavily processed with a bunch of unnatural ingredients and high in sodium, etc. I eat only natural foods that are mostly organic.

Eat some of these.

Peanut butter and banana bagels.
CHickpea curry with fried cashew rice.
Roast vegetable pizza ( go crazy with the soy cheese and olive oil).
Cashew, peanut, sesame seed trail mix- make your own. Use dates, dried apricots and dried apples too. SNack on that.
Chocolate mousse raw tart with macadamia nuts ( use cocoa, avocado, dates, agave for the mousse part.
Fried tofu noodles, with sesame seeds.
Onigiri with red beans.
Soybean and fried cabbage gyoza with plum sauce. There is literally nothing more comforting sometimes than fried gyoza, all plump and fried crispy.http://japaneseveganeg.blog.fc2.com/blog-entry-30.html

If you're eating a huge bowl of steamed brocoli, try adding oil and almonds, then fried garlic too- it's going to add fat and taste, and still healthy.
Why not make the rice- into Japanese rice, with sesame seeds, some garlic oil, black beans and cashews in the rice. Not just plain old rice.

If you think about it, meat is fat, salt, protein iron. SO are soybeans, peanuts, walnuts, sesame seeds, cashews, tofu, seitan, gluten, tempeh etc.

SO imagine a steak sized portion of peanuts. Or a peanut lentil loaf. Really use your nutrition well and eat foods nutrient rich. A bowl of steamed broccoli, is a lot of bulk, but not as densly packed with all kinds of nutrients as a bowl of lentil, cashew, almond and oat loaf.

Yup like Lori says, nuts, seeds, avocados, margarine, olice oil. These are all healthy fat too. You need high amounts of protein and carbs. With your diet you are just getting carbs I suggest getting vegan protein powder or meal replacement.

Nuts, seeds, avocados and olive oil are all pretty healthy and high calorie. They're also relatively easy to add to your diet- add some nut butter to your fruit, avocado to beans, seeds, olive oil to a salad, etc.
