Diffraction grating can separate different colours from white due to the interfere of diffracted light from a large number of fine slits. But White light is not coherent afterall, why can spectra still be formed?

That's why the white light must first be collimated. Light emergent from a good collimator can be treated as coherent, similar to the one used in the Young's Double Slit Experiment.
