想你必學過much用來修飾不可數名詞，而many修飾可數名詞，如：

I don't earn much money. (money為不可數）
I don't have many clothes.(clothes為可數)

但much除了可作形容詞外，它還可作為副詞，可用來修飾比較級的形容詞，如：

Our house is much bigger than theirs.
A bicycle is much cheaper than a car

much並不是修飾their house, a car，而是修飾bigger, cheaper(既然是修飾可形容詞，又何來可數與不可數）

而We do get many more assignments than before的do是用來加強語氣用，如：

"Can I buy stamps here?" "Well, we do sell them, but we haven't got any at the moment."

若在譯成中文，大可以用＂真的＂來譯do,
We do get many more assignments than before.

我們真的比從前多了很多功課。

I have fewer evenings free now.已經表達清楚...再想附加便有點畫蛇添足。
就算是附加形容或量化有多fewer也是用countable 的many.但就很怪了。

只是把get這個動詞的原形verb和tense分析寫出來表達加強那動詞的語氣

原本是we get many...
當中包含get這個動詞和配這個we第三身眾數的do的時態

假如那例句是
She gets many assignments.
拆開來便是
She does get many assignments.

意思是強調「她"真是"有很多作業...」

Much is used only with uncountable nouns,mainly in negative sentences.
