2. make people feel excited usually means you're causing somebody to feel excited. The meaning is generally the same with latter one. But "make people feel THE excitement" would be grammatically correct rather than merely "make people feel excitement"
so in general, "make people feel excited" = make people feel excitement

3. I think you made a typo mistake here.
should be "of“ instead of "pf" right? If not, correct me.
This merely means she has a talent in introducing animals (talking about animals) to people which could make people excited (feel the excitement).

If you want to use "makes", the sentence would be:
She has that same gift of talking to people about animals which makes them excited.


But the meaning of the sentences would then be different
For example, She has the same gift of talking to people about animals and making them
