concentrated H2SO4+sugar

I would like to ask

After conc. H2SO4 is added to sugar, it become black because it is turned
into carbon.

But, carbon usually occur in diamond and graphite only and the black substance
does not look like graphite. So what is it?

It is charcoal, an allotrope of carbon.

The crystalline allotropes of carbon include graphite, diamond and fullerenes.

The amorphous (non-crystalline) allotrope of carbon is charcoal.
