about the cell membrane

the cell membrane lipid is unique in a sense that it can form "lipid bilayer". the formation of lipid bilayer is the most stable form of structure and will be form physically, like mycell.

if both ends are hydrophilic, the membrane will dissolve in water , so it is not able to compartment different cells
if both ends are hydrophobic, the membrane will be unstable in water , and it will form drplets, so unable to compartmnt cells
since organisms are made up by a lot of water both inside cells and otside cells, so cell membrane is facing both sides of water. in order to be stable in both sides, so cell membrane has the hydrophilic ends facing outside and hydrophobic ends facing inside. this forms the phospholipid bilayers.

the fatty acid tails are not charged, they are non-polar and insoluble in water. therefore they are hydrophobic.
as for the phosphate heads, they are charged. they are polar and soluble in water. therefore they are hpydrophilic.
