its anything that isnt sweet or desert like. think meat, eggs, cheese instead of fruit and sugar.

are you talking about the batter or the crepes as a whole in general?
and yes it is salty, instead of adding sugar you add salt into the batter
once the savory crepes batter has been cooked it is filled with savory fillings, ingredients you would not find in desserts, such as onions, mushrooms, ect.
