1.The dolphin is an intelligent animal.是對的- it refers to all dolphins.
Usually we write: Dolphins are intelligent animals.
2.Dolphin is an intelligent animal.是不對的-wrong grammar as dolphin is a countable noun..
It can be rewritten as "A dolphin is an intelligent animal.". But then the sentence only refers to one dolphin and not all dolphins.

because "dolphin"is a countable noun..
所以你點都要add 個 unit A 或者 article THE 上去
it should be like this -> A dolphin is an intelligent animal
所有noun都係咁用的 你要注意noun既single 同plural form
好多字唔洗加S 例如fish.. one fish two fish . cod one cod two cod
