If I just started dating this girl, is meeting her (or having a date) once a week too much? She and I are both busy.

No, that's definitely not too much especially if you're both busy. Some people including me would think once a week isn't enough but of course I'm not that busy and have a lot of free time. As long as she is happy with it then you are all good.
