Using "it" / "they" for unknown gender?

I know you could use "they" or "their", but how about say in a situation if you're looking at a dog, you know there is only one (singular), would it be safe to say "I think it's cute"?

You are right. We can say "I think it's cute."But if you know the gender, you may say "I think she is cute" or "I think he is cute."
