do u know how and where can i use hong kong dollars to change to a cheque of US dollars?

You can go to the bank which you have a HK dollar or other currency account.Ask the bank to issue a US dollar cashier cheque to you and debit the USD
equivalent amount plus bank charges from your account.
The payee can be third party or to yourself and it must be deposited to a bank to collect the momey.
If you do not have an account with the bank , try to ask them whether you can pay cash to buy the USD cheque. I am not sure about this.
