A is the answer.

(1):By some maths, you can find that the surface area of many cubic beef is far larger than that of a large piece beef. The larger surface area allow boil oil to transfer heat to the beef by conduction, so that it is correct.

(2): Boiling oil's temperature is over 200 C, which is far higher than boiling water (100 C). So the beef is cooked faster.

(3) Oil has never participated in the reaction of cooking beef. So it can never be catalyst.

It is (1) only not with (2) as the higher surface area , heat conduct faster than the thicker slice of meat . Since when the oil is boiling , it is at a constant temperature so none of the above is correct !!! Only (1) is the correct answer .

supplementary:
oil Does has participate in cooking of the beef (protein matrix...). it conducts heat.

however, it doesn't chemically react with the protein, neither in intermediate steps or in overall.
