材料:

河粉----------------10兩

牛肉----------------3兩

銀芽----------------2兩

韮皇----------------3兩



調味:

雞精----------------1/3茶匙

生抽----------------1湯匙

老抽----------------2茶匙



醃牛肉材料:(一斤計)

糖----------------------五分

雞精-------------------1錢

鹽----------------------1錢

生粉-------------------3錢

食粉-------------------1錢

鬆肉粉----------------少許

清水-------------------3兩

生油-------------------1兩



醃牛肉做法:

1.將所有醃料用清水開溶倒入牛肉內拌勻

2.攪拌約15分鐘後~觀察牛肉是否吸收所有水份~如牛肉太乾涸即加入適量水份

3.最後加入生抽蓋過表面



做法:

1.將鑊燒紅~加人涼油2湯匙,以慢火加入牛肉~將牛肉泡油

2.撈起牛肉~把油到去~加入河粉~炒鬆~

3.加油芽菜快炒~加入牛肉及調味~再炒一會

4.最後加入韮皇,炒約10秒便可上碟

Ingredients:

Rice noodle------375g
Beef----------------112.5g
Bean sprout------75g
Leek----------------112.5g

Seasoning:

Chicken stock (powder)-----1/3 teaspoon
Soy sauce----------------------- 1 tablespoon
Dark soy sauce----------------2 teaspoon

Marinade for beef (every 600g):

Sugar------------------5g
Chicken stock (powder)------4g
Salt-------------------------4g
Cornstarch--------------12g
Baking soda------------4g
Water--------------------112.5g
Soy sauce--------------37.5g

To marinade the beef:
1. Mix the marinade with water then mix with the beef
2. After mixing for 15 minutes, see if the beef has absorbed all the water. If the beef seems too dry, put in more water.
3. Pour soy sauce over the beef

Steps:
1. Heat up the frying pan, put in 2 tablespoon of oil, turn the heat down and add beef.
2. Take out the beef, pour away the excess oil, add rice noodle, sautee.
3. Add bean sprout, sautee, add beef and seasoning, sautee.
4. Add leek, sautee for 10 seconds and finish.
