Deep Fried Fish Fillet in Creamed Corn Sauce

Ingredients:

龍利柳 2塊 (2 pieces sole fillet)
栗米蓉 1罐 (1 can creamed corn)
雞蛋 2隻, 發勻 (2 eggs, beaten)
麵包糠 1/2杯 (1/2 cup of bread crumbs)
麵粉 1/2杯 (1/2 cup of flour)

Methods:

1-Wash sole fillet and pat dry. Sprinkle salt and ground white pepper on each side of the fillet and marinade for 10 minutes.

2-Dip marinated sole fillet into flour, then in beaten egg, and then roll in bread crumbs.

3-Deep-fry fish fillet in oil with a small heat until it is fully cooked. Then turn to high heat and deep-fry until golden brown. Drain from oil and set aside.

4-Pour creamed corn in a pan and bring it to a boil. Season with salt. Add beaten egg to the sauce and stir well. Pour sauce over the fillet and serve.

Tips:

1-想斑塊脆D嘅話, 可以切細塊先上粉炸.

2-龍利柳多數都係雪藏魚, 會比較多水份, 記住盡量印乾先上粉.

1-If you want the fillet to be more crispy, cut it into several pieces before coating.

2-Remember to pat dry the frozen fillets before coating as they are quite watery.

Fish fillet with corn sauceIngredients :1 fish fillet
5 tbsps. of cooking oil
1 tbsp. of flour
1 tbsp. of butter
1/2 tbsp. of flour
3/ 4 c . of corn water (from the can of corn kernels)
1/ 2 c . of drained corn kernals
salt, pepper to taste
chopped fresh cilantro leaves for garnishCooking procedure :Season the fish fillet with salt and pepper. Dust with flour.Heat the cooking oil in a frying pan. Cook the fish fillet on both sides until browned.
Keep the heat at medium-high so that a crisp crust forms on the outside of the fish while the inside remains moist. NEVER overcook fish.Drain the cooked fish fillet on absorbent paper towels.In a small sauce pan, melt the butter. Add the flour all at once, stirring to prevent lumps from forming.
Cook over medium-low heat for a few minutes to cook the flour thoroughly
and remove any trace of floury taste.
Pour in the corn water slowly, stirring constantly as you pour. Add the corn kernels and cook until the corn kernels are heated through.
Off the heat, season with salt and pepper.Pour the corn sauce over the fish.
Sprinkle with chopped fresh cilantro for an added zing.

1 1/4 cups fresh corn kernels (from 2 or 3 ears)
1 tablespoon butter
1/2 cup reduced-sodium chicken broth

In a medium nonstick frying pan over medium-high heat, cook corn in butter, stirring often, until corn begins to turn brown, 2 to 3 minutes. Spoon 2/3 cup into a small saucepan. Set aside frying pan with remaining corn.
