If you are not so interested in Science subjects, you can opt to choose 3 electives from Arts / Business options.
From your packages, you can choose Option 2 which has one seemingly Arts subject ( Geog ) and 2 Business subjects ( Econ + BAFS ). These subjects have flexibilities for your university programme selection.
First, Geography is mainly taken by Arts students before but actually, many Science students take it as well since in CUHK, Geography is offered also for Science subjects. Hence, it left a room for you to link it for other related programme like Environmental Studies in further study.
Second, your Econ and BAFS are Business subjects and if you study them well, each university has lots of related degree programmes provided for you to choose. It is a very popular faculty and devotion in them is valuable.
Someone else say Science has better future, probably because if you take both Physics and M2, you can pursue Engineering which has a lot of seats but the requirements are low. However, HK has a surplus demand of these graduates. Hence, studying it does not guarantee a good future now. Never believe such myth.
Do not forget that you can also choose other faculties like Laws, Journalism, Social Science, etc, in your future studies. Hence, your option 2 has very high flexibility which enables you choosing many different faculties in the future. That is good for you when you have undecided the future development path.
