想係屋企整吉列豬扒整到餐聽咁好食,去街市賣薄切豬扒番屋企洗乾淨用菜刀背十字形輕啄10零吓,再用美極.喼汁.胡椒粉.生粉.小量清水撈好醃15分鐘即可備用,面包糠用幼粒(唔好)用粗粒因為好二炸燶,上吉列做法:用碗攪拌1隻雞蛋.面粉放落餐碟鋪平,幼面包糠放落餐碟鋪,先將醃好豬扒2面上面粉再放落攪拌好D雞到一定要黏好蛋漿先,再放落面包糠2面用力壓實即可備用,油温最好120至150度。備註:落豬扒炸時要大火後轉慢火炸。

吉列豬扒應用蛋漿上麵包糠,而不應使用面粉或者粟粉。而要上到麵包糠,則要令豬扒乾身(我會使用光波爐來風乾;餐廳則可能會用麵粉),才能令蛋槳貼好。要令外脆內熟,則應控制油溫在180度至200度之間,如果無電炸爐,就要控制好爐火,剛好起泡時就約為180度,再轉為慢火,切不能令缸炸油出煙。第二點要注意,就是二度油炸(第二次炸),可令豬扒更脆,保證豬扒更熟。
