老師說若用了 after / beofe 這個詞，可不用過去完成時態，因為before 和 after 已經表達事情發生的先後次序，所以可以用「過去簡單式」來代替「過去完成式」
但我見很多過去完成式的練習題, after / before 用過去完成式, 而不用過去簡單式

如果是羅事件發的次序或同時的狀況(過去式)，以上的例句由於兩件事都是按程序(或先後次序)的，你的老師是對的。不過當中亦有些變他是因為兩件事的關係而要用不同時態：
例如
After he had finished the homework, his mother still would not let him play.
則會用had finished以表示他「實在已經」做「完」功課後，但後面發生的卻跟「應該」出現的卻不是預期的結果。簡單地說是增強意思的反差。
當然可以直述：
After he finished the homework, his mother still did not let him play.
但意思便好像說成不準玩耍是跟住做了功課的正常過程。
