His writing is as good as we all want him to be.以及 His writing is as good as that we all want him to be.
上述您提供的這兩個句型都是不太正確的。
其實只要將第一句的 him 改成 it 就可以了。
His writing is as good as we all want it to be.
因為你的 subject 是 His writing，所以要用 it，不能用 him。
否則就會成為標準的台灣英文囉。

那麼以上兩句都正確，只是省略技巧不同，而且第二句的文法型式過於古怪，不建議。
並且His writing is as good as we all want him to be 較自然。
