2) 定係 Encl. photo, certificate and resume要寫得咁清楚?

Yes, you are right and both Nos.1 and 2 are correct.If there are 2 or 3 enclosures, it is advisable to mention what they are such as:

1 copy of my recent photo
1 copy of my School Certificate
1 copy of my resume
