﹍﹍﹍÷25g peanut butter
﹍﹍﹍×咖啡粉 1茶匙
﹍﹍﹍÷1 tsp. coffee powder
﹍﹍♥朱古力忌廉For Chocolate cream
﹍﹍﹍×淡忌廉 100毫升
﹍﹍﹍÷100ml whipping cream
﹍﹍﹍×牛奶 50毫升
﹍﹍﹍÷50ml milk
﹍﹍﹍×純朱古力溶液 250克
﹍﹍﹍÷250g pure chocolate (melted)
﹍﹍♥0.3吋厚海綿蛋糕3片 (6吋×6吋方形)﹍﹍♥3 pieces 0.3-inch thick sponge cake (6 inch × 6 inch square)

﹍﹍﹍÷100g gel firm
﹍﹍﹍×朱古力裝飾 適量
﹍﹍﹍÷some chocolate decoration
﹍﹍﹍×紅加侖子 適量
﹍﹍﹍÷some red currant
﹍﹍﹍×果仁 適量
﹍﹍﹍÷some nuts

﹍﹍﹍÷6 inch × 6 inch square cake mould
﹍♥製法 Method
﹍﹍♥咖啡忌廉 Coffee cream
﹍1﹍將牛油打起至略變白。
﹉﹉﹉Whip butter until colour whitens.
﹍2﹍加入花生醬拌勻。
﹉﹉﹉Add peanut butter and mix well.
﹍3﹍加入蜜糖拌勻。
﹉﹉﹉Add honey and mix well.
﹍4﹍用少量熱水將咖啡粉溶解,加入拌勻,備用。
﹉﹉﹉Melt coffee powder with a little hot water. Add into butter mixture. Mix well and set aside.
﹍﹍♥朱古力忌廉 Chocolate cream
﹍5﹍將淡忌廉和牛奶混合煮滾,熄火。
﹉﹉﹉Combine whipping cream and milk. Bring to boil. Turn off heat.
﹍6﹍加入朱古力溶液拌勻,備用。
﹉﹉﹉Mix well with melted chocolate. Set aside.
﹍﹍♥併餅 Final Combination
﹍7﹍在餅模內放上1片海綿蛋糕。
﹉﹉﹉Place 1 piece sponge cake in cake mould.
﹍8﹍在蛋糕上加一層朱古力忌廉,抹平。
﹉﹉﹉Add a layer of chocolate cream. Smooth surface.
﹍9﹍在朱古力忌廉上放第2片海綿蛋糕。
﹉﹉﹉Add the second piece of sponge cake on chocolate cream.
﹍10﹍先將咖啡忌廉稍為加熱至軟身,加在蛋糕上,抹平。
﹉﹉﹉Heat coffee cream to soften texture. Add onto cake. Smooth surface.
﹍11﹍在咖啡忌廉上放第3片海綿蛋糕。
﹉﹉﹉Add the third piece of sponge cake on coffee cream.
﹍12﹍在表層塗滿朱古力忌廉,放入雪櫃冷藏二小時;將鏡面朱古力煮溶,加在表面,攏放鮮果、果仁和朱古力裝飾,最後灑上糖霜。
﹉﹉﹉Spread chocolate cream on surface. Chill in fridge for 2 hours. Cook to melt coating chocolate. Add onto cake surface. Arrange fresh fruits, nuts and chocolate decoration. Sprinkle with icing sugar.
﹍♥貼士 Tips
座溶朱古力時,溫度不宜過高,將50'C便可,太高溫會影響朱古力忌廉的質感。
Melt chocolate pieces at temperature of 50'c. Too high a temperature will affect the texture of chocolate.
