Why it's conduct electricity?

We had had a experiment about which fruit can couduct electricity the best. Then we conclude that banana can conduct the electricity the best because it contain the least amount of water. Therefore, less water in the fruit, the better performance shows out. Also we conclude that lemon is the most acid but it dose not conduct the electricity well. So it will not affect the result.

But why it is the result?

"conduct" or "generate" ?

electrical conductance depends on medium's ability to transfer charges from one end to another.
in fruits, elemental metals are not present, so charges are carried by ions.
acidic or not is NOT the main factor. instead, concentration of ions is.
even the fruit is acidic, concentration of ions isn't necessary to be high (higher than not-so-acidic fruits).
concentration depends on what? amount of that substance & amount of water that substance dissolved in.

what're the experimental conditions?
do you test with whole piece of banana, sliced one, or crushed puree?
and lemon? whole? sliced? juice?
are they in the same length (distance between two electrodes)?
and voltage and current? could the heat generated cook, boil or even char the sample?
you know the structure of lemon ---- juice is contained in many small sacs, thus are separated. could that affect the result?
