on是指定日子,例句中mr. smith到達的日期是指定只有當天(monday)才會到。
by是指在這日子前,by日子的意思是最後期限,所以finish work by friday表示你應該盡力在星期五「前」完成,最遲是在星期五當天完成。
現今工作上很多人都以為/認為老闆這樣寫我在星期五交功課已經應該得滿分,但其實老闆心中你到星期五才交表示你「效率不高」或「等到最後一天才做」的感覺,久而久之便成為老闆對你的工作態度扣分了。
如果你用on既話
即係該天,冇其他日子

即佢會星期一返黎,唔會其他日子返黎
說話者既意思較為肯定
You must finish the work by Friday.
呢句用by即係之前
星期五之前你一定要交(包埋星期五
意思一樣肯定,不過時間的意思就冇咁肯定
假如今天是星期一,你鐘意星期二,三,四交都冇問題
不過呢樣野就唔可以套用在第一句,因為第一句明確指出佢星期一會返黎

In the first sentence, 'on' means Mr Smith arrives on that particular day. The day is set, therefore it is 'on' and not 'by'.
'By' Friday means the work has to be done before Friday. Friday is the deadline. However, the work can be done at any time before Friday. Therefore, its 'by' Friday. 'On' doesn't make sense in this sentence.
