其實這問題與：究竟是have breakfast定have breakfast一樣
問題不在breakfast，而在eat

同樣buffet也是與breakfast，是看eat的用法

eat除了解作將東西放進口裏吃外，還可解＂用餐＂（to have a meal）

所以，have buffet和eat buffet同樣可以

應是：I ate a lunch buffet in XX Hotel或I had a lunch buffet in XX hotel. (因為buffet是可數名詞）

食buffet is use eat or have
Must not use 'eat' here, instead, you should use have or take.

eg:
I'll have dinner buffet with my parents this Sunday.
I'll 'eat' a lot of fish that night.

should be have. next time you can check on dictionary if you have any questions on any English words. it's useful and you'll definitely learn a lot from it.
