saying is a noun?

Pinkie Owens, better known around the neighborhood as "Grandma," was
operating her home store that afternoon when a young man came to the door,
(saying) he wanted to buy two sodas, officials said.

The word 'saying' in line three is a noun position of a clause?
Can the sentence rewrite as a complete sentnece without a comma in the end of second line?

Please teach and explain, your assistance is much appreciated.

I am here not to answer your question but I agree with clp8888 that "saying" is a present participle rather than a gerund.

In the sentence, saying is a present participle = "He said that"
If you put a full-stop at the end of the second line, then you need to write "He said that he wanted........" as the secoond sentence.
Instead of starting a new sentence: "He said that....", it is good English to use a comma and then use a present participle to connect / combine the two sentences.

e.g. He arrived half an hour late. He said that there was a traffic jam.
He arrived half an hour late, saying that there was a traffric jam.

The bold printed word, adjective telling us more about whot Pinkie is so must be with commas.

Saying...... is a clause and saying in this part is gerund not noun.

i.e,

Seeing Tom standing outside, Mary has closed the door immediately.

1. "Saying" is a gerund.In other words,it is also a noun.

The reason why "say" needs to be changed into "saying" is
that there should be one main verb in the sentence.
Futhermore," came" is not a bare infinitive like "help",make".
So, in this case,when you mention two verbs in a sentence,
you should write as a verb + gerund ( came + ...+saying)


2. Sure, you can take away that comma.
