Certain foods have the ability to protect themselves from being damaged by oxidation. This is because these foods contain chemicals called “anti-oxidatants”, such as vitamins A, C and E. For example, lemons contain vitamin C that inhibits oxidation of apple slices. This can be verified by immersing a fresh apple slice in fresh lemon juice and then exposing it to air. The apple slice does not turn brown because of the anti-oxidizing property of vitamin C present in the lemon juice.

Do you think apples contain vitamin C? Why?

蘋果有少量維他命C,
但因其份量很少,
所以抗氧化能力很低,
蘋果肉的酚很易被氧化成醌。
