Naturally presented in the wood are water molecules that are oxygen. This is achieved by having the fuel mixed with hydrogen bonded to the hydroxyl groups of the cellulose. On raising the temperature the wood dehydrates as these water molecules become volatile (they change into steam and diffuse through the wood's structure to the outside surface). This prevents the temperature rising much above 100 degree celcius until all the water has been removed.
