Latent heat refers to the heat needed to change something from one stage to another. For example, when ice is changed into water, certain heat is absorbed in the process and it is the latent heat.

Heat transfer refers to the heat transferred. For example, when a hot steel rod is immersed into cold water, the heat will be transferred to the water so that the temperate of the rod is lowered. On the other hand, the cold water will be getting warmer.
