有火時，火的溫度大過100度，煲的底部的金屬也是高於100度，水便會滾。熄火後，煲底金屬部分仍是高於100度，所以水繼續滾。
液態水變氣態水，會帶走熱力；熄火後，煲底漸漸冷卻。當煲底溫度下降至100度以下，水便不會再滾。
這解釋為甚麼熄火後，水仍可滾一會兒。
如果你用很厚的煲來煲水，熄火後，水可以比用薄煲滾更久。

When you turn off the fire after the water reaches its boiling point, the convection current set up during heating of the water has not died down so rapidly (water itself has mass, and its convective movement does possess a certain amount of momentum). That's why you could still observe that the water is "boiling off".
