Q1.run加ing就要running,因為n前面有u,只要是a,e,i,o,u都要咁,,,但eat加ing點解係eating,而不是eatting????

When there is only one vowel - a, e, i, o, u = ing running, getting, hitting travelling etc. There may be some exception too - knowing etctwo vowels are together, then simply add ing - sailing, eating, hearing etc.
You have to memorise it by heart. Then, you will know it gradually.
