STAMENT FROM TEXT BOOK:
When fats or oils are heated with an alkali,they are hydrolysed first to form
glycerol and alkanoic acid.The acid then react with the alkali to form sodium
or potassium salts which are soaps.

so why don't we just add alkali to alkanoic acid to make soap?

Fats act as a raw material for making alkanoic acid.
It is not easy to find alkanoic acid but easy to find fats in the natural enviroment.

I think the statement from the said text book is incorrect.

Refer to the mechanism of alkaline hydrolysis (this will be taught in AL or U-level), the esters in fats and oils are directly hydrolysed to glycerol and alkanoate ions. No acid is formed as intermediate of the reaction.
