Shallow-fried Pork Steak with Minced Ginger (薑蔥豬扒)
Ingredients
Pork steaks - 4-5 pieces
Minced ginger - 2 Tbsp
Garlic (minced) - 1 clove
Chopped spring onion and red pepper rings
a little each
Seasonings
Light soy sauce - 2 Tbsp
Sugar - 1 1/4 tsp
Cornstarch - 1/2 tsp
Water - 3 Tbsp
Salt, sesame oil and pepper - a little each
Method
1.
Wash and then pat dry the pork steaks. Slightly flatten with the blade of the knife. Add the minced garlic and the seasonings, stir well and let stand for 45~60 minutes. Set aside.

Drain the pork steaks. Shallow-fry them with some hot oil until they are almost cooked. Push the steaks aside in the wok and saut? the minced ginger. Sprinkle with a little wine and put in the remaining marinade. Cover to stew for a while until the steaks are cooked and the sauce almost dries up. Transfer the ingredients onto a plate and sprinkle with the chopped spring onion and red pepper rings on top. Serve hot.

Bean with Cheese (芝士豆卜)
Ingredients
15 beancurd puffs
8 slices individually-wrapped cheese (cut into small slices)
Dipping Sauce: Japanese brown Okonomiyaki sauce
Method
1.
Knead beancurd puffs in water lightly for several times. Rinse and squeeze out water. Slit once at a side.
2.
Stuff cheese slices into beancurd puffs. Heat a little oil in a wok. Fry the beancurd puffs until golden brown and crispy. Serve with the dipping sauce.
