If you stay in Nuremberg, then I would recommend you to visit Wurzburg and Rothenburg ODT.

You can still stay the hotel at Nuremberg because you just only take around one hour from Nuremberg to Wurzburg and around one to two hour from Nuremberg to Rothenburg ODT.
