羊肉咖喱角 Lamb Samosa
材料:
油 (炸嘢用)
500g 免治羊肉 (minced lamnb)
1/2 茶匙小茴子種子 (cumin seeds)
1 粒大蒜 (garlic), 硺蓉
1/2 紅椒仔 (red chilli), 硺碎
1 粒生薑 (ginger), 硺碎
1/2 茶匙沉金末 (turmeric)
1/2 茶匙胡荽末 (ground coriander)
1/2 茶匙印度什香粉 (garam masala)
小撮碎鮮胡荽 (fresh coriander)
1 洋葱, 硺碎 (onion)
3 塊油穌片( filo pastry)
製法:
1. 在平底鑊將油加熱, 加入免治羊肉, 煮熟後加入小茴子、蒜蓉、紅椒仔、薑、沉金末、胡荽末、碎胡荽、印度什香粉. 撈勻.
Heat the oil in a frying pan and add the mince. Brown the meat thoroughly before adding the cumin, garlic, chilli, ginger, turmeric, ground coriander and garam masala. Mix well.
2. 撈入鮮胡荽及碎洋葱, 離火.
Stir through the fresh coriander and chopped onion and remove from the heat
3. 在鍋中將油加熱.
Heat the oil ina a deep pan.
4. 將肉餒放上油穌片, 摺成三角形.
Lay a sheet of filo pastry out and pile a small amount of the mixture in one corner. Roll the filo around the mixture until you have a perfectly sealed triangle.
5. 放在油中炸成金黄, 冷卻數分鐘後食用.
Place the triangles into the oil and fry for a few minutes until golden brown. Leave to stand for a few minutes before serving.
