如果是油即是fatty acid , 是organic acid例如stearic acid , oleic acid等是slightly acdic pH<7 , 用pH2.5酸性是不能溶入油 . 但是for protein又不同 , protein is made up with amino acids linking with peptide which can be broken by the acid solution in the stomach . The stomach fluid is HCL with pH<2.5 .
