Stuffed lamb chops with garnetberries and mint
Ingredients
White wine or water 1/2 cup
garnetberries 1/3 cup
bread crumb 1/3cup
fresh mint (chopped) 1/3 cup
1 grinded garlic
a pinch of salt and pepper
lamb chops for two servings
Steps
1. Let the wine simmer in a small saucepan over low heat. Remove it from heat, put in the garnetberries and cook for 10 minutes until the fruits swell. Drain.
2. Mix the garnetberries with bread crumb, mint and garlic in a big bowl. Season with salt and pepper.
3. Place the lamb chops on a chopping board. Cut out a long and deep pocket in the middle of the meat with a long sharp knife. Stuff the other indgredients into the pocket with hands or a spatula.
4. Heat up the grill or frying-pan. Grill or pan-fry the lamb chops for 2 minutes on each side until they turn golden brown. Then grill them in a preheated oven of 450 degrees until done. For medium rare, grill for about 8 minutes.
5. Remove bones and serve.
