English. Notice that it must be fresh pineapple.

Fresh pineapple contains lots of enzymes which can break down the protein to simple amino acids . Since the protein will bond with each other & with water to form a semi-solid substance--gel . Without the enough protein , no coagulation is resulted .

Fresh pineapple contains acids.
Enzymes responsible for setting the jelly will lose its function in acidic condition.
Then, the jelly cannot set.
