You need 2 things to work as a nurse in Australia, assume you are not Australian Citizens or Permanent Resident and you only have HK Registered Nurse Qualification.
1.) A Working Visa
2.) An Australian Statewide Nurse Qualification

Australian Working Visa, you can either get a Medical Profesional Visa or a Permenant Resident Visa.
For Medical Professional Visa, you will need either Australian State Government sponsorship or a job offer from an Australian Hospital/Clinic. Then you will also need to get your skill assess and transfer to Australian qualification.
For Permanent Resident Visa, you need to go though the whole point test and get your english and skill assessed. you can find information on either of those visa on Australian Immigration Website
An Australian Qualification, your HK qualification is not enough to practice nurse in Australia, you need to change your HK qualification to Australian State Qualification (There are no Federal Organisation for nurse in Australia) That you need to first approved by ANMC (Australian Nurse and Midfery Council) and if they pass your assessment, you can then proceed to getting a statewide qualification in the state you intent to practice nursing.
