I am respectable = I am respected by somebody - respected is a verb in this sentence and it is also a passive voice sentence.
You can also say - I am respected ( this means the same but you have not mentioned who respects you.

I am respected,可解成:

我係受人尊敬的. (adjective sentence)

亦可解成:

我被人尊敬. (verb sentence)

2. "I am respected" 中的 "am" = 是，所以"am" = 動詞而 "respected" = 形容詞是對的。
如果是 I am respected by ... 那 "respected" 就是動詞的了！
