It would be easy to get married in Australia, but if your boyfriend does not financially stable, he cannot apply you to Australia...
To get Married in Australia, you only need to book 28 days in advance and pay off a ceremony fees. Then you can get married in any prearranged location. IT can be a hotel plaza, church, wedding registry or anywhere you pre-arranged.
Different state have their own requirment. Some need more some need less. But generally, you will need to have possport and birth certificate to get married in Australia.
However, getting Residency is whole another stories. When you arrive in Australia, you can go to the nearest Immigration Office and apply for a spousal sponsorship visa (in Australia, we call them Partner Visa)
You need to fill in the form and find people to verify your relationship. and also satisified a financial requirment.
I do not know the current financial requirment but as of 5 years ago, your husband, in this case, would need to earn at least 34,000AUD per year in Australia to get sponsorship. I think it maybe as high as 40,000 AUD a year now.
You will need passport and another Photo ID (HKID does not count), marriage certificate and your husband payslip and/or tax return report to apply for marriage.

Assume you mean the residency application, they are the same, the only different is if you apply offshore, you wait offshore. You will not be able to live in Australia before your partner visa is granted.
But if you apply in Australia, they will give you a bridging visa for staying before your partner visa have any result. Bear in mind you cannot work if you apply bridging after a tourist visa
