Is it a preservative or a spice? Some people say order chinese food without msg but others say leave it how it is....whats the difference?

MSG is a flavor enhancer. It's not a preservative or spice. The chemical name for MSG is monosodium glutamate. MSG was first made and marketed in Japan and was then brought to the USA. MSG is not only found in Asian food, but also pre-prepared stock cubs (bouillon cubes), barbeque sauce and salad dressing, snack foods, seasoning mixtures, etc.

While it is safe for most people to consume MSG, it's known to cause the worsening of asthmatic symptoms for some people. It's also known to cause headache for others.

Most Asian people do not use MSG when cooking at home. MSG is mostly used by restaurants to enhance the flavor of food. You can certainly request restaurants to hold the MSG.

I do taste a difference in Chinese food since it was eliminated from their recipes. I wish they would add it in their dishes again!

It does not taste better. My wife [Chinese] cooks without MSG. It is very salty and will make many people feel sleepy, thirsty and many other symptoms. Here's a news flash for you. MSG is in almost ALL foods you buy in your local grocery store with the exception of fresh fruits & vegetables. It is not on the list of ingredients because it is hidden in the catch all----Spices and natural flavorings.

I would always try to avoid MSG, as much as I would try to avoid excessive salt. For myself, it makes my nose stuffed up (as does other 'preservatives'--aka sulphites/ates). I care less as to what it really is, I just know its not natural, and it causes problems.

The one thing is, is that it's really cheap. Countries in Africa have used it and iodized it, like we make iodized salt--figure that! (found in a reputable nursing journal while I was researching nursing in Africa)

If I were you, just use regular salt. But as another responder said, MSG IS in everything!! Its really crappy, but its yet another inspiration to not eat processed foods everyone!! Eat fresh! :)

Ok firstly MSG is a glutamate that is naturally found in foods anyway. MSG heightens the flavor of dishes but doesn't have to be used at all. To get quality chinese food at home there are techniques to learn, processes to following like timing and ingredients to be understood like contrasting flavors i.e. bitter -- sweet, hot -- sour etc.. and the fact chinese use stock and not water, master sauces etc. Quality ingredients will make all the difference like soy sauces, shoaxing wine, oyster sauces and if possible getting sauces by quality brands i.e. Lee *** Kee, Pearl bridge etc. Then there's the heat and seasoned wok, the woks in chinese takeaways are seasoned giving the takeaway taste and the high heat sources give a caramelisation to foods also cooking food but keeping them crisp.

Msg isnt really a preservative or a spice its kinda both. It persevres the food but also adds taste. Msg is especially popular in asain food as a flavor enhancer. Hope this helps.

MSG really doesn't add or detract from the flavor, more or less neutral.
The Chinese restaurants use it to maintain the fresh color of the veggies when cooking, and so do I.
