Stanley (Hong Kong Island) and Mui Wo (Lantau Island). Both offer tranquility and peace, and (particularly Mui Wo) greenery... they're good places to have a barbecue too!

Tai-O. It's rural, different from the busy crowded city-scene and it offers so much on the "forgotten" life of Hong Kong. There's water, mountains, villages, fishing boats, etc. Very relaxing, very calm and you might see pink dolphins en route to Tai-O (short ferry ride from Hong Kong Island).

Victoria Peak: very nice views.
