People are 'trained' in eating spicy food.

For example, when everyone were little (baby), didn't they just tolerate all kind of taste, colour and texture of all food?

There are four main flavors placed on our tongue such as sweet, sour, spicy and bitter. Because we are so used to to sweet and that we rarely eat spicy food, the taste buds in our tongue has gone to 'sleep.'

If you train your tongue like eating spicy once or twice a week, you will able eat more spicier and spicier food than you thought you could.

Of course, to start of 'training', go for mild spicyness because you never go on the top level if you never start the lowest.

You tolerate spicy foods by building up a tolerance.

They probably tolerate spicy foods because people might have grew up on it like i did. I can eat a lot of spicy food. Or maybe there culture or ancestors have something to do with it?

I dunno because i've never tried that, but different people have different pain tolerances and can actually train themselves to maximise their pain tolerance further.
