Mm... it could depend on.. how thin or thick the steak was, and the type of seasoning you use. Sometimes when you use a seasoning it will make the steak start to burn on the outside because of the sugars and spices. Some blood in a steak isn't bad depending on how you like it. Usually when there is blood it is rare and if you don't like it rare it needs to cook longer. But I would just say it all depends on the size, maybe it wasn't cooked long enough or maybe you hat the grill on too hot?

Invest in a meet thermometer. Most of them have a gage on there that will tell you what temp medium and well are. Sounds like you prefer your steak dead so try low and slow (lower your grill temp) so the outside doesn't burn before you get to the well done point.

Until you get better, cheat. That is, when you think things are done, cut into the meat to check.

Other recommendation is to start learning on thinner steaks (3/4 inch or so). It is much easier to judge doneness.

It sounds like you're cooking it too fast (too hot) You could easily solve this by getting a meat thermometer. It will tell you the inside temps of the meat to cook it to rare, medium, or well done - and in between. If you lower the temps on your grill - or not put the meat on right away, it should cook more evenly.

Ok well first of all, start your grill let it get really hot let it fire up as you do, then when it starts to fire down let it, then feel the heat of it but put your hand over the grill just to feel the hotness of the grill, don't touch. So by now maybe a good 25 mins have went bye you have very little fire and grill is very hot, then you add seasoned meat.close the top to the grill and check on it maybe every 15 just looking making sure it doesn't burn or your flames don't rise ok. (depending on the size and thickness that's how you know how long you should cook each side) let's say 20-25 min went by now turn it over, let's assume another 15-2- went by then you take off grill and your steaks should be done inside out which is called well done. Remember a good cook can't rush the perfection of food.

When cooking steaks on a grill, you have to make sure that they have warmed up to room temperature after you take it out of the fridge. This will help it cook more evenly. Also, watch for flame flare-ups. As the fat cooks, it may drip onto the fire, and this could cause flame to shoot up, overcooking the outside of the steaks.
Keep practicing, and soon your steaks will turn out great.

You should NEVER cook beef well done.

That is as good as throwing your money in the trash. Medium is the Most done you should make your steak.

Is it beef or lamb?

Whatever red meat (except from pork), some blood from the middle is still fine.

Good job you grilled your meat! Remember not to use high heat for the steak and slowly grill the meat. I think the heat you have used is too high because it wouldn't have looked burnt on the outside and still blood on the inside.

Anyway, did you pat the steak before you grill? It will be easier to cook and the meat will just 'melt' in the mouth.

Good luck!

Maybe you don't have your grill hot enough. Maybe you should slice the middle of the stake leaving a opening to cook in the middle. Make sure you clean the stake completely before you cook it.
